Ingredients and seasonings for Florentine Butterfly Chicken Pie:
- Boiled or Roasted Chicken - Cooking chicken adds flavor. Or if it's pre-cooked chicken, reheat to a comfortable temperature
- 1/2 can cream cheese
- Fat cream or milk. Or a bit of both. I use a bit of both, which suits me better. There is no fixed amount, just blink to get the desired consistency.
- 1 bunch spinach - fresh or frozen (if frozen, drain excess water)
- Farfalle/pasta box with 1 tie
- 2 cloves of garlic, finely chopped
- 1 yellow onion, chopped
- 1 cup chicken stock
- 1/3 cup optional - chopped mushrooms
- 2 tablespoons of white wine, optional
- 3 tablespoons of salted butter
- 1 salt and pepper
- 1 Italian seasoning
- 1 I also use a spice called olive garlic and herbs
- Parma cheese
- Crispy Baked Bacon - Optional
Directions for making Florentine Chicken Pasta
- When the chicken is cooked and done, remove from the pan and set aside. Meanwhile, cook the pasta in a separate bowl. Now...in the pot you cooked the chicken in, put the heat on medium and melt the butter. Add the garlic and onion. Stir constantly to prevent burning. Add the mushrooms when the onions are almost translucent. Continue cooking/boiling until done.
- Add the cream cheese and parmesan and start to melt. Stir in the chicken stock until all is dissolved. Once melted, add milk/heavy cream, spices and wine (if desired), add chicken and bring to a simmer/cook. If the sauce is too thick, you can add more milk to the desired consistency. Or if it's too thin, add more cream cheese or grated parm cheese.
- Add the spinach and add to the sauce. Mix until done.
- When ready, you can add the drained pasta noodles to the pot and stir. Or put the pasta on a plate and pour the sauce mixture over it. Your choice I put everything together. You can also sprinkle it over cooked pork :)
